Description

A quick and cozy tomato vegetable soup made in one pot and ready in just 15 minutes.


Ingredients

Scale

1 tbsp olive oil

1 small yellow onion, diced

2 cloves garlic, minced

1 cup diced carrots

1 cup diced celery

1 can (28 oz) crushed tomatoes

4 cups vegetable broth

1 tsp dried basil

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1 cup frozen mixed vegetables


Instructions

1. Heat olive oil in a medium pot over medium heat.

2. Add onion, carrots, and celery, and cook for 4-5 minutes until slightly softened.

3. Stir in garlic and cook for 30 seconds until fragrant.

4. Pour in crushed tomatoes and vegetable broth, stirring to combine.

5. Add basil, oregano, salt, and black pepper, then bring to a gentle boil.

6. Stir in frozen mixed vegetables and simmer for 8-10 minutes until tender.

Notes

Blend part of the soup for a smoother texture if desired.
