Description

Cozy, quick, one-pot taco soup made with simple pantry ingredients in just 20 minutes.


Ingredients

1 lb lean ground beef

1 tbsp olive oil

1 small yellow onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or 2 tbsp homemade)

1 tsp ground cumin

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can corn, drained

1 (14.5 oz) can diced tomatoes

1 (4 oz) can diced green chiles

2 cups beef broth

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, chopped cilantro, tortilla chips


Instructions

1. Heat olive oil in a large pot over medium heat, then brown the ground beef until fully cooked.

2. Add the diced onion and garlic, cooking 2-3 minutes until softened.

3. Stir in the taco seasoning and ground cumin, coating the beef mixture well.

4. Add the black beans, corn, diced tomatoes, green chiles, and beef broth.

5. Bring the soup to a gentle boil, then reduce heat and simmer for 10 minutes.

6. Season with salt and pepper to taste and serve warm with your favorite toppings.

Notes

For thicker soup, simmer an extra 5 minutes or mash a small portion of the beans before stirring back in.
