Description
Tender chicken breasts roasted with caramelized radishes in a sweet and tangy balsamic glaze. A fresh and simple spring dinner.
Ingredients
4 boneless, skinless chicken breasts
1 lb fresh radishes, trimmed and halved
3 tbsp olive oil
1/3 cup balsamic vinegar
2 tbsp honey
3 cloves garlic, minced
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
Instructions
1. Preheat oven to 400°F and line a large baking sheet with parchment paper.
2. In a small bowl, whisk together balsamic vinegar, honey, minced garlic, dried thyme, salt, and black pepper.
3. Place chicken breasts and halved radishes on the baking sheet. Drizzle with olive oil and toss the radishes gently to coat.
4. Pour the balsamic mixture evenly over the chicken and radishes.
5. Roast for 22-25 minutes, or until the chicken reaches 165°F internally and the radishes are tender and lightly caramelized.
6. Let rest for 5 minutes before serving, spooning extra glaze from the pan over the top.
Notes
For extra color and brightness, sprinkle with freshly chopped parsley or a squeeze of lemon just before serving.
