Beef Enchilada Casserole

This beef enchilada casserole is cozy, simple, and perfect for busy nights. It layers classic enchilada flavors into one easy bake that feeds the whole table. No rolling required, just scoop and serve.

Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 (10 oz) can red enchilada sauce
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 cups shredded Mexican-blend cheese
  • 8 corn tortillas, cut into strips
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat, then cook ground beef and onion until browned. Add garlic and cook 30 seconds.
  3. Stir in taco seasoning and enchilada sauce, then mix in black beans and corn. Remove from heat.
  4. Spread a thin layer of the beef mixture in the baking dish, then add a layer of tortilla strips and a sprinkle of cheese.
  5. Repeat layers until ingredients are used, finishing with cheese on top.
  6. Bake uncovered for 25 minutes, until bubbly and lightly golden. Let rest 5 minutes before serving.
