Description

Tender asparagus wrapped in savory beef pancetta and roasted until crisp, perfect for an easy Valentine’s appetizer.


Ingredients

1 lb fresh asparagus, trimmed

6 oz beef pancetta, thinly sliced

1 tbsp olive oil

Freshly ground black pepper

Optional: lemon wedges for serving


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. Toss the asparagus with olive oil and a light sprinkle of black pepper.

3. Wrap each asparagus spear tightly with one slice of beef pancetta, starting at the base and spiraling upward.

4. Arrange the wrapped asparagus in a single layer on the baking sheet, seam side down.

5. Roast for 15-18 minutes, turning once halfway, until the pancetta is crisp and the asparagus is tender.

6. Serve warm with lemon wedges if desired.

Notes

For thicker asparagus spears, blanch for 1-2 minutes before wrapping to ensure even tenderness.
