A smoky, spicy homemade beef pepperoni recipe that’s easy to make at home, perfect for pizzas, sandwiches, and snacks.
Ingredients
2 pounds lean ground beef (90/10)
2 teaspoons curing salt
2 tablespoons paprika
1 tablespoon garlic powder
1 teaspoon crushed red pepper
1 teaspoon black pepper
1 teaspoon oregano
1 tablespoon salt
Optional: 1 teaspoon smoked paprika
Optional: 1 teaspoon fennel seeds
Optional: 2 teaspoons cheese powder
Optional: 1/2 teaspoon liquid smoke
Instructions
1. Combine ground beef with all spices in a large bowl.
2. Mix thoroughly by hand until spices are evenly distributed.
3. Cover and refrigerate for at least 2 hours.
4. Remove from refrigerator and knead again.
5. Shape into cylindrical logs approximately 1.5 inches in diameter.
6. Wrap logs tightly in plastic wrap or parchment paper.
7. For oven: Preheat oven to 200°F (93°C) and bake logs for 6-8 hours until internal temperature reaches 160°F (71°C).
8. For smoker: Smoke logs at consistent temperature for 4-6 hours.
9. For dry curing: Hang logs in a cool, ventilated space for 2-3 weeks.
10. Cool completely before slicing and storing.

Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
