Beef Taco Skillet

This beef taco skillet is a cozy, one-pan dinner that brings bold taco flavor to the table with very little effort. It’s hearty, cheesy, and perfect for busy weeknights when you want comfort food without the mess. Everything cooks together in one skillet for easy prep and easy cleanup.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup salsa
  • 1 cup cooked white rice
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  2. Add diced onion and cook for 3-4 minutes until softened. Stir in garlic and cook for 30 seconds.
  3. Sprinkle taco seasoning over the beef and stir well to coat evenly.
  4. Add black beans, corn, salsa, and cooked rice. Stir to combine and cook for 5 minutes until heated through.
  5. Season with salt and pepper to taste, then sprinkle shredded cheddar cheese evenly over the skillet.
  6. Cover and cook for 2-3 minutes, just until the cheese is melted.

Tip: Serve straight from the skillet with tortilla chips, sour cream, or sliced avocado for an easy build-your-own meal.

This skillet is perfect for weeknights and even better as leftovers the next day.
