Description

A cozy one-pan beef taco skillet with rice, beans, corn, and melted cheese, perfect for easy weeknight dinners.


Ingredients

Scale

1 lb ground beef

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 cup canned black beans, drained and rinsed

1 cup frozen corn

1 cup salsa

1 cup cooked white rice

1 cup shredded cheddar cheese

Salt and pepper, to taste


Instructions

1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.

2. Add diced onion and cook for 3-4 minutes until softened. Stir in garlic and cook for 30 seconds.

3. Sprinkle taco seasoning over the beef and stir well to coat evenly.

4. Add black beans, corn, salsa, and cooked rice. Stir to combine and cook for 5 minutes until heated through.

5. Season with salt and pepper to taste, then sprinkle shredded cheddar cheese evenly over the skillet.

6. Cover and cook for 2-3 minutes, just until the cheese is melted.

Notes

Serve with tortilla chips, sour cream, or avocado if desired.
