- 1 tbsp olive oil

Instructions
- Pat the beef dry and season all sides with salt and black pepper.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear beef on all sides until deeply browned, about 3-4 minutes per side. Remove and set aside.
- Add sliced onion to the pot and cook for 5 minutes until softened. Stir in garlic and cook 30 seconds.
- Pour in beef broth, scraping up any browned bits. Stir in Worcestershire sauce, tomato paste, thyme, and smoked paprika.
- Return beef to the pot, cover, and simmer on low for 2 1/2-3 hours, until very tender.
- Shred beef with forks and serve warm on toasted sandwich rolls with extra braising juices spooned over.
Tip: For extra flavor, toast the rolls with a little butter before assembling the sandwiches.
