Description
Cozy Cajun-spiced crab-stuffed mushrooms baked until tender and golden.
Ingredients
20 large white mushrooms, stems removed
1 cup lump crab meat
4 oz cream cheese, softened
1/3 cup finely chopped green onions
1/4 cup grated Parmesan
1/4 cup breadcrumbs
1 tbsp Cajun seasoning
1 tbsp lemon juice
1 tbsp melted butter
1/4 tsp salt
1/4 tsp black pepper
Instructions
1. Heat oven to 375°F and line a baking sheet with parchment.
2. Clean the mushroom caps and place them hollow-side up on the prepared sheet.
3. In a bowl, mix the crab meat, cream cheese, green onions, Parmesan, breadcrumbs, Cajun seasoning, lemon juice, salt, and black pepper until well combined.
4. Spoon the mixture into each mushroom cap, mounding it slightly.
5. Brush the tops lightly with melted butter.
6. Bake 18-20 minutes, until the filling is set and the mushrooms are tender.
7. Let them cool a few minutes before serving.
Notes
For extra browning, broil for 1-2 minutes at the end.
