Description
A bold and easy Cajun shrimp rice bowl made with juicy shrimp, warm spices, and fluffy rice.
Ingredients
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp Cajun seasoning
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp black pepper
2 cups cooked white rice
1 cup corn kernels
1 cup diced bell peppers
2 green onions, sliced
Fresh lemon wedges, for serving
Instructions
1. Pat the shrimp dry and place them in a bowl with olive oil, Cajun seasoning, smoked paprika, garlic powder, and black pepper. Toss until evenly coated.
2. Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer.
3. Cook the shrimp for 2-3 minutes per side, until pink and cooked through. Remove from the skillet.
4. In the same skillet, add the corn and diced bell peppers. Sauté for 3-4 minutes until warmed and lightly softened.
5. Divide the cooked rice between bowls and top with the sautéed vegetables.
6. Add the shrimp on top, garnish with green onions, and serve with lemon wedges.
Notes
Add extra spice with cayenne pepper or hot sauce if desired.
