Description

Crispy baked tater tot bites mixed with broccoli and melted cheese for an easy, cozy snack or appetizer.


Ingredients

3 cups frozen tater tots, thawed

1 cup finely chopped broccoli florets

1 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Preheat oven to 400°F and lightly grease a 24-cup mini muffin pan.

2. Roughly mash the thawed tater tots in a large bowl until crumbly.

3. Stir in chopped broccoli, cheddar cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper until evenly combined.

4. Spoon the mixture into the muffin pan, pressing gently to pack each cup.

5. Bake for 20-22 minutes, until golden and crispy around the edges.

6. Let cool for 5 minutes, then gently remove and serve warm.

Notes

Chop the broccoli very small so the bites hold together and bake evenly.
