Cheesy Ground Beef and Rice Bake

Ingredients

  • 1 lb lean ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 cups shredded cheddar cheese, divided
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook 3-4 minutes until softened.
  3. Add ground beef and cook until browned, breaking it up as it cooks. Stir in garlic and cook 30 seconds more. Drain excess grease if needed.
  4. Stir in uncooked rice, beef broth, cream of mushroom soup, milk, salt, pepper, paprika, and 1 cup of shredded cheddar cheese. Mix until combined.
  5. Pour mixture into the prepared baking dish. Cover tightly with foil and bake for 45 minutes.
  6. Remove foil, sprinkle remaining 1 cup cheddar cheese on top, and bake uncovered for 10-15 minutes until cheese is melted and bubbly. Let rest 5 minutes before serving.

Tip

For extra flavor, stir in 1/2 cup diced bell peppers or a handful of frozen peas before baking. Make sure the dish is tightly covered so the rice cooks perfectly tender.
