Description

Crispy wonton cups filled with seasoned beef, beans, corn, and melted cheese, baked until golden and bubbly.


Ingredients

12 wonton wrappers

1 lb ground beef

1 oz taco seasoning packet

2/3 cup water

1/2 cup canned black beans, drained and rinsed

1/2 cup corn kernels

1 cup shredded cheddar-jack cheese

Cooking spray


Instructions

1. Preheat oven to 375°F and lightly spray a 12-cup muffin pan with cooking spray.

2. Press one wonton wrapper into each muffin cup, forming a small bowl shape.

3. In a skillet over medium heat, cook ground beef until fully browned, breaking it up as it cooks.

4. Stir in taco seasoning and water, simmering for 3-4 minutes until slightly thickened.

5. Remove from heat and stir in black beans and corn.

6. Spoon beef mixture into the wonton cups, top evenly with shredded cheese, and bake for 15 minutes until wrappers are crisp and cheese is melted.

Notes

Cool for a few minutes before removing from the pan to help the cups hold their shape.
