Description
Fresh and easy chicken breast tacos topped with creamy lime slaw, ready in under 30 minutes.
Ingredients
1 lb boneless skinless chicken breasts
1 tbsp olive oil
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
8 small flour tortillas
2 cups shredded green cabbage
1/4 cup chopped fresh cilantro
1/4 cup sour cream
1 tbsp mayonnaise
1 tbsp fresh lime juice
1 tsp lime zest
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Season chicken breasts with chili powder, cumin, garlic powder, paprika, salt, and black pepper.
3. Cook chicken for 6-7 minutes per side until fully cooked and internal temperature reaches 165°F. Remove and let rest 5 minutes, then slice thinly.
4. In a bowl, stir together cabbage, cilantro, sour cream, mayonnaise, lime juice, and lime zest to make the slaw.
5. Warm the tortillas in a dry skillet or microwave until soft.
6. Fill each tortilla with sliced chicken and top generously with lime slaw. Serve immediately.
Notes
For extra flavor, squeeze a little fresh lime over the chicken right before serving and add sliced avocado if desired.
