Description

Rich chocolate lava cakes with soft centers, perfectly sized for two and ready in minutes.


Ingredients

Scale

1/4 cup unsalted butter

4 oz semisweet chocolate, chopped

1/4 cup powdered sugar

1 large egg

1 large egg yolk

1/2 tsp vanilla extract

2 tbsp all-purpose flour

1/8 tsp salt


Instructions

1. Preheat the oven to 425°F. Butter two 6-oz ramekins and lightly dust with flour.

2. Melt the butter and chopped chocolate together, stirring until smooth.

3. Whisk in the powdered sugar until combined.

4. Add the egg, egg yolk, and vanilla extract, whisking until smooth.

5. Fold in the flour and salt just until combined.

6. Divide batter between ramekins and place on a baking sheet.

7. Bake for 12-14 minutes until edges are set and centers are soft. Rest 1 minute and serve warm.

Notes

Serve immediately for the best molten center. Dust with powdered sugar or add berries if desired.
