Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 2 tbsp unsweetened cocoa powder
  • 1/4 cup mini chocolate chips
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Add the rolled oats, cocoa powder, and salt to a medium bowl and stir to combine.
  2. Spoon in the peanut butter and honey, then add the vanilla extract.
  3. Mix until a thick, even dough forms and no dry spots remain.
  4. Fold in the mini chocolate chips until evenly distributed.
  5. Scoop about 1 tablespoon of mixture and roll into a smooth ball.
  6. Repeat with remaining mixture and place bites on a parchment-lined plate.
  7. Chill in the refrigerator for 20-30 minutes until firm.

Tip

If the mixture feels too sticky, chill it for 10 minutes before rolling. For a softer bite, let them sit at room temperature for a few minutes before serving.

These little bites are perfect for snacking now or later, so make a batch and keep them ready in the fridge whenever a chocolate craving hits.
