Description
Rich, no-bake chocolate truffle energy bites made with oats, peanut butter, and cocoa powder.
Ingredients
1 cup old-fashioned rolled oats
1/2 cup creamy peanut butter
1/4 cup honey
2 tbsp unsweetened cocoa powder
1/4 cup mini chocolate chips
1/2 tsp vanilla extract
Pinch of salt
Instructions
1. Add the rolled oats, cocoa powder, and salt to a medium bowl and stir to combine.
2. Spoon in the peanut butter and honey, then add the vanilla extract.
3. Mix until a thick, even dough forms and no dry spots remain.
4. Fold in the mini chocolate chips until evenly distributed.
5. Scoop about 1 tablespoon of mixture and roll into a smooth ball.
6. Repeat with remaining mixture and place bites on a parchment-lined plate.
7. Chill in the refrigerator for 20-30 minutes until firm.
