Ingredients
3 ripe bananas (mashed)
1 cup cottage cheese (blended smooth)
2 large eggs
1/3 cup melted butter
1/2 cup brown sugar
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon (optional)
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. In a large bowl, mix mashed bananas, blended cottage cheese, eggs, butter, sugar, and vanilla until well combined.
3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
4. Gently fold the dry mixture into the wet mixture until just combined-don’t overmix.
5. Pour batter into the loaf pan and smooth the top.
6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
7. Cool in the pan for 15 minutes before transferring to a wire rack.
