This cottage cheese egg bake is a protein-packed, Southern-inspired dish that’s simple to prepare and perfect for breakfast meal prep.
Ingredients
6 large eggs
1 cup cottage cheese
1 cup shredded cheddar or Swiss cheese
1 cup fresh spinach, chopped
Salt and pepper, to taste
Butter or spray for greasing
Instructions
1. Preheat oven to 375°F (190°C).
2. Grease an 8×8-inch baking dish.
3. In a bowl, beat eggs until blended.
4. Mix in cottage cheese, shredded cheese, spinach, salt, and pepper.
5. Pour mixture into the dish and smooth the surface.
6. Bake for 35-40 minutes or until the center is set and top is golden.
Notes
Let it cool slightly before slicing for cleaner cuts.
Swap in mushrooms, bell peppers, or cooked sausage to customize.
