Description

A cozy low-sugar cranberry orange loaf with bright citrus and tart berries, perfect for Christmas baking.


Ingredients

Scale

1/2 cups all-purpose flour

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/3 cup neutral oil

2 large eggs

1/2 cup low-fat plain yogurt

1/4 cup fresh orange juice

1 tbsp orange zest

1 tsp vanilla extract

1 cup fresh or frozen cranberries (not thawed)


Instructions

1. Preheat the oven to 350°F and line a 9×5-inch loaf pan with parchment paper.

2. Whisk the flour, sugar, baking powder, baking soda, and salt in a large bowl.

3. In another bowl, whisk the oil, eggs, yogurt, orange juice, orange zest, and vanilla extract.

4. Add the wet ingredients to the dry ingredients and stir gently until almost combined.

5. Fold in the cranberries, then pour the batter into the prepared loaf pan.

6. Bake 48-55 minutes, or until a toothpick comes out clean.

7. Cool in the pan for 10 minutes, then transfer to a rack to cool completely.

Notes

Brush cooled loaf with orange-juice glaze if desired.
