Description

Cozy cranberry-walnut stuffed mushrooms perfect for holiday gatherings.


Ingredients

16 large white mushrooms, stems removed and finely chopped

2 tbsp butter

1/3 cup finely chopped walnuts

1/3 cup finely chopped dried cranberries

1/4 cup finely chopped green onions

1/3 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1/4 tsp salt

1/4 tsp black pepper


Instructions

1. Preheat oven to 375°F and line a baking sheet with parchment.

2. Melt the butter in a skillet, then sauté the chopped mushroom stems until softened, about 4-5 minutes.

3. Stir in walnuts, dried cranberries, and green onions, cooking 1-2 minutes more.

4. Remove from heat and mix in cream cheese, Parmesan, salt, and pepper until smooth and combined.

5. Spoon the filling into mushroom caps and place them on the baking sheet.

6. Bake 18-20 minutes, or until the tops are lightly golden and the mushrooms are tender.

Notes

For a crisper top, add a sprinkle of Parmesan before baking.
