Creamy Chicken Breast Carbonara

Description

This creamy chicken breast carbonara is rich, silky, and perfect for a cozy weeknight pasta dinner.


Ingredients

12 oz spaghetti

2 boneless, skinless chicken breasts, sliced

6 slices turkey bacon, chopped

2 tablespoons olive oil

3 cloves garlic, minced

3 large eggs

1 cup freshly grated Parmesan cheese

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup reserved pasta water


Instructions

1. Bring a large pot of salted water to a boil and cook the spaghetti according to package directions. Reserve 1/4 cup pasta water before draining.

2. While the pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium heat. Cook the turkey bacon until golden and slightly crisp. Remove and set aside.

3. In the same skillet, add the remaining 1 tablespoon olive oil and sliced chicken breasts. Cook for 5-7 minutes, until fully cooked and lightly golden. Add minced garlic and cook for 30 seconds.

4. In a bowl, whisk together the eggs, grated Parmesan, salt, and black pepper.

5. Add the hot drained spaghetti to the skillet with the chicken. Remove from heat. Quickly stir in the egg and Parmesan mixture, tossing constantly to create a creamy sauce.

6. Add reserved pasta water a little at a time until the sauce is silky and smooth. Stir in the cooked turkey bacon and serve immediately.

Notes

Remove the pan from heat before adding the egg mixture to prevent scrambling and ensure a creamy sauce.
