Creamy Chicken Breast Lasagna

There’s something so comforting about pulling a bubbling pan of lasagna from the oven. This Creamy Chicken Breast Lasagna is layered with tender shredded chicken, rich ricotta, gooey mozzarella, and a simple homemade sauce that tastes like it simmered all day. Ingredients

  • 9 lasagna noodles
  • 2 cups cooked chicken breast, shredded
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 3 cups marinara sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F. Cook lasagna noodles according to package directions, then drain and set aside.
  2. In a skillet over medium heat, warm olive oil. Add garlic and cook for 30 seconds. Stir in marinara sauce and Italian seasoning. Simmer 5 minutes.
  3. In a bowl, mix ricotta cheese, egg, Parmesan cheese, salt, and black pepper until smooth.
  4. Spread 1/2 cup sauce in a 9×13-inch baking dish. Layer 3 noodles, half the ricotta mixture, half the shredded chicken, and 1/2 cup mozzarella. Repeat layers once.
  5. Top with remaining 3 noodles, remaining sauce, and remaining mozzarella cheese.
  6. Cover with foil and bake 25 minutes. Remove foil and bake 10-15 minutes more, until bubbly and golden. Let rest 10 minutes before slicing.

Tip

For extra flavor, add a handful of chopped spinach or sautéed mushrooms between the layers.
