Description
Cozy and creamy chicken gnocchi made in one skillet with parmesan and spinach, ready in under 30 minutes.
Ingredients
1 lb boneless skinless chicken breasts, diced
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
3 cloves garlic, minced
1 tsp Italian seasoning
2 cups chicken broth
1 cup heavy cream
1 lb potato gnocchi
1/2 cup grated parmesan cheese
1 cup fresh spinach
1/2 tsp crushed red pepper flakes (optional)
Instructions
1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced chicken, 1 tsp salt, and 1/2 tsp black pepper. Cook 5-6 minutes until golden and cooked through.
2. Stir in minced garlic and 1 tsp Italian seasoning. Cook 30 seconds until fragrant.
3. Pour in 2 cups chicken broth and 1 cup heavy cream. Bring to a gentle simmer.
4. Add 1 lb potato gnocchi. Cook 4-5 minutes, stirring occasionally, until gnocchi are tender and sauce begins to thicken.
5. Stir in 1/2 cup grated parmesan cheese and 1 cup fresh spinach. Cook 1-2 minutes until spinach wilts and sauce is creamy.
6. Sprinkle with 1/2 tsp crushed red pepper flakes if desired. Serve warm.
Notes
For extra richness, let the sauce simmer an additional 1-2 minutes to thicken before adding the spinach.
