Creamy Shrimp Alfredo (Easy Weeknight Classic)

Description

Creamy shrimp alfredo with tender shrimp and rich Parmesan sauce, perfect for an easy and comforting dinner.


Ingredients

12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

2 tbsp unsalted butter

3 cloves garlic, minced

1 ½ cups heavy cream

1 cup freshly grated Parmesan cheese

½ tsp salt

¼ tsp black pepper

¼ tsp red pepper flakes (optional)

2 tbsp chopped fresh parsley


Instructions

1. Cook the fettuccine in salted water according to package directions until al dente. Reserve ½ cup pasta water, then drain.

2. Heat olive oil in a large skillet over medium heat. Add shrimp and cook 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.

3. In the same skillet, melt butter and add garlic. Cook for 30 seconds until fragrant.

4. Pour in the heavy cream, salt, black pepper, and red pepper flakes if using. Simmer gently for 3-4 minutes, stirring often.

5. Stir in Parmesan cheese until the sauce is smooth and creamy. Thin with reserved pasta water if needed.

6. Add cooked pasta and shrimp to the sauce and toss until evenly coated. Garnish with parsley and serve warm.

Notes

Use freshly grated Parmesan and keep heat low after adding cheese for a smooth sauce.
