Creamy Spinach Chicken Skillet

Description

Tender chicken breasts simmered in a creamy garlic sauce with fresh spinach for an easy one-pan spring dinner.


Ingredients

4 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

2 tablespoons olive oil

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

3 cups fresh baby spinach

1/2 teaspoon Italian seasoning


Instructions

1. Season the chicken breasts on both sides with salt, black pepper, and garlic powder.

2. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5-6 minutes per side, until golden and cooked through. Remove from the skillet and set aside.

3. In the same skillet, add the minced garlic and cook for 30 seconds until fragrant.

4. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.

5. Stir in the Parmesan cheese and Italian seasoning. Let the sauce simmer for 3-4 minutes, until slightly thickened.

6. Add the spinach and cook until wilted, about 2 minutes. Return the chicken to the skillet and spoon the sauce over the top. Simmer for 2-3 minutes before serving.

Notes

For an extra spring touch, add a squeeze of fresh lemon juice right before serving to brighten the creamy sauce.
