Crispy Loaded Potato Skins

Description

Crispy potato skins filled with cheddar, turkey bacon, sour cream, and green onions for an easy, cozy appetizer.


Ingredients

Scale

4 medium russet potatoes

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 cup shredded cheddar cheese

4 slices turkey bacon, cooked and crumbled

1/2 cup sour cream

2 green onions, thinly sliced


Instructions

1. Preheat the oven to 400°F and scrub the potatoes clean.

2. Pierce each potato with a fork, rub with 1 tbsp olive oil, and bake 45-50 minutes until tender.

3. Let the potatoes cool slightly, then slice them in half and scoop out the centers, leaving a thin layer of potato.

4. Brush the insides with the remaining 1 tbsp olive oil, sprinkle with salt and pepper, and bake cut-side down for 10 minutes, then flip and bake another 10 minutes until crisp.

5. Fill each potato skin with cheddar cheese and turkey bacon, then return to the oven for 5-7 minutes until the cheese melts.

6. Top with sour cream and green onions just before serving.

Notes

Save the scooped potato centers for mashed potatoes or another recipe.
