Crispy Salmon Cakes

Ingredients

  • 1 lb fresh salmon, skin removed
  • 1 tbsp olive oil
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 2 tbsp mayonnaise

  • 1 tbsp fresh lemon juice
  • 2 tbsp finely chopped parsley
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Instructions

  1. Finely chop the salmon by hand or pulse briefly in a food processor until coarsely ground.
  2. In a large bowl, combine the salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, lemon juice, parsley, garlic powder, onion powder, salt, and pepper.
  3. Gently mix until just combined, being careful not to overwork the mixture.
  4. Form the mixture into 8 evenly sized patties.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Cook the salmon cakes for 3-4 minutes per side, until golden brown and cooked through.

Tip

If the mixture feels too soft, refrigerate the patties for 15 minutes before cooking to help them hold their shape.
