Description
Crispy salmon cakes that are golden outside, tender inside, and easy to make with simple pantry ingredients.
Ingredients
1 lb fresh salmon, skin removed
1 tbsp olive oil
1/2 cup plain breadcrumbs
1 large egg
2 tbsp mayonnaise
1 tbsp Dijon mustard
1 tbsp fresh lemon juice
2 tbsp finely chopped parsley
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Finely chop the salmon by hand or pulse briefly in a food processor until coarsely ground.
2. In a large bowl, combine the salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, lemon juice, parsley, garlic powder, onion powder, salt, and pepper.
3. Gently mix until just combined, being careful not to overwork the mixture.
4. Form the mixture into 8 evenly sized patties.
5. Heat the olive oil in a large skillet over medium heat.
6. Cook the salmon cakes for 3-4 minutes per side, until golden brown and cooked through.
Notes
Chill the patties for 15 minutes before cooking if the mixture feels soft.
