Description

Tender baked salmon topped with a creamy Dijon layer and crispy golden panko crust. An easy 30-minute dinner that feels special.


Ingredients

4 salmon fillets (about 6 oz each)

2 tbsp Dijon mustard

2 tbsp mayonnaise

1/4 cup panko breadcrumbs

1 tbsp olive oil

1 tbsp fresh parsley, finely chopped

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

Lemon wedges, for serving


Instructions

1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

2. Pat salmon fillets dry and place them skin-side down on the prepared baking sheet.

3. In a small bowl, stir together Dijon mustard and mayonnaise. Spread evenly over the top of each fillet.

4. In another bowl, mix panko breadcrumbs, olive oil, parsley, garlic powder, salt, and black pepper.

5. Press the breadcrumb mixture gently over the mustard layer on each fillet.

6. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the topping is golden.

7. Serve warm with fresh lemon wedges.

Notes

For extra crunch, broil the salmon for the last 1-2 minutes, watching closely so the topping doesn’t burn.
