Description
Delicate homemade pasta stuffed with creamy burrata and parmesan, finished with your favorite sauce. A romantic, luxurious dish perfect for special occasions or when you want to impress.
Ingredients
2 cups all-purpose flour
1 cup semolina flour (optional)
3 large eggs
1 tablespoon extra-virgin olive oil
1/2 teaspoon salt
8 oz burrata cheese
1/4 cup grated parmesan
Zest of 1/2 lemon (optional)
Black pepper, to taste
Salt, to taste
Fresh basil or parsley, for garnish
Butter, cream, or roasted tomato sauce (for serving)
Instructions
1. Mix the flours on a clean surface and create a well in the center.
2. Crack the eggs into the well. Add olive oil and a pinch of salt.
3. Gently beat the eggs and begin incorporating flour from the edges.
4. Knead the dough for 8 minutes until smooth. Wrap and rest 30 minutes.
5. Drain burrata and mash in a bowl. Stir in parmesan, lemon zest, salt, and pepper.
6. Roll out the rested dough into thin sheets (1-2mm thick).
7. Cut dough into ravioli shapes. Add 1 tsp of filling to each, then seal with water.
8. Press to remove air and seal tightly. Place on floured tray.
9. Boil salted water. Cook ravioli in batches for 2-4 minutes.
10. Toss with warm sauce, garnish with herbs, and serve immediately.
Notes
You can substitute a mix of mozzarella and cream if burrata is unavailable.
To freeze, place uncooked ravioli on a tray, freeze solid, then store in bags.
For added flavor, brown butter with lemon makes a great finishing sauce.
