Greek Chicken Phyllo Triangles

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup crumbled feta
  • 1/2 cup finely chopped spinach
  • 1/4 cup finely chopped green onions
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 10 sheets phyllo dough, thawed
  • 1/4 cup melted butter or neutral oil for brushing

Instructions

  1. In a bowl, mix the shredded chicken, feta, spinach, green onions, lemon juice, oregano, garlic powder, salt, and pepper until well combined.
  2. Lay one sheet of phyllo on a clean surface and lightly brush with melted butter. Add a second sheet on top and brush again.
  3. Cut the stacked sheets into 3 long strips. Place 1-2 tablespoons of filling at the bottom of each strip.
  4. Fold each strip into a triangle, alternating sides as you go up, until the strip is fully wrapped.
  5. Place triangles on a lined baking sheet and brush the tops with more butter.
  6. Bake at 375°F for 18-20 minutes, or until crisp and golden.

Tip

Keep phyllo covered with a lightly damp cloth while working so it doesn’t dry out.
