Description
This easy ground beef and peppers stir fry comes together in about 30 minutes with simple pantry ingredients and bold savory flavor.
Ingredients
1 lb ground beef
2 tbsp olive oil
3 bell peppers (red, yellow, and green), sliced
1 small yellow onion, sliced
3 cloves garlic, minced
1/4 cup low-sodium soy sauce
1 tbsp brown sugar
1 tbsp cornstarch
1/4 cup beef broth
1/2 tsp black pepper
1/2 tsp crushed red pepper flakes (optional)
2 green onions, sliced (for garnish)
Instructions
1. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease and set aside.
2. In the same skillet, add remaining 1 tbsp olive oil. Add sliced bell peppers and onion, and cook for 4-5 minutes until slightly tender but still crisp.
3. Stir in minced garlic and cook for 30 seconds until fragrant.
4. In a small bowl, whisk together soy sauce, brown sugar, cornstarch, beef broth, black pepper, and crushed red pepper flakes.
5. Return the cooked ground beef to the skillet. Pour the sauce over the mixture and stir well. Cook for 2-3 minutes until the sauce thickens and coats everything evenly.
6. Remove from heat and garnish with sliced green onions. Serve warm over rice if desired.
Notes
Add a splash of sesame oil for extra flavor or include snap peas for added crunch.
