Ground Beef Burrito Bowls

  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1/3 cup water
  • 2 cups cooked white rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook 3-4 minutes until softened. Stir in garlic and cook 30 seconds.
  2. Add ground beef and cook 6-8 minutes, breaking it apart, until browned. Drain excess grease if needed.
  3. Stir in taco seasoning and 1/3 cup water. Simmer 3-4 minutes until slightly thickened.
  4. Warm black beans and corn in a small saucepan or microwave until heated through.
  5. Divide cooked rice among serving bowls. Top with seasoned beef, beans, corn, cherry tomatoes, shredded cheddar, and avocado slices.
  6. Add a dollop of sour cream, sprinkle with cilantro, squeeze fresh lime juice over the top, and season with salt to taste.
