Description
A quick and hearty ground beef fried rice made in one skillet with simple pantry ingredients and ready in about 30 minutes.
Ingredients
1 lb ground beef
3 cups cooked white rice (cold, day-old preferred)
2 tbsp vegetable oil, divided
2 large eggs, lightly beaten
1 cup frozen peas and carrots
3 green onions, sliced
3 cloves garlic, minced
1/4 cup soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
1/2 tsp black pepper
Instructions
1. Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart, about 5-7 minutes. Drain excess grease if needed.
2. Push the beef to one side of the pan. Add remaining 1 tbsp oil to the empty side and pour in the beaten eggs. Scramble until just set.
3. Stir in garlic and cook for 30 seconds until fragrant.
4. Add peas and carrots, then stir in the cold rice. Cook for 3-4 minutes, breaking up clumps.
5. Pour in soy sauce, oyster sauce, sesame oil, and black pepper. Stir well and cook another 2-3 minutes until everything is heated through.
6. Remove from heat and fold in sliced green onions. Serve warm.
Notes
Cold, day-old rice gives you the best texture. Fresh rice can turn soft and sticky, so spread it on a tray to cool if needed.
