Ground Beef Hobo Casserole

This Ground Beef Hobo Casserole is the kind of cozy, no-fuss dinner that feels like home. Layers of seasoned beef, tender potatoes, and creamy sauce bake together into one hearty dish. It’s simple, filling, and perfect for busy weeknights when you just want something warm and comforting.

Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 3 medium russet potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter, for greasing

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish with butter.
  2. In a skillet over medium heat, cook ground beef and diced onion until beef is browned. Drain excess grease. Stir in garlic powder, salt, and black pepper.
  3. In a small bowl, whisk together cream of mushroom soup and milk until smooth.
  4. Layer half of the sliced potatoes in the prepared baking dish. Top with half of the beef mixture and pour over half of the soup mixture. Sprinkle with 1/2 cup shredded cheddar.
  5. Repeat layers with remaining potatoes, beef, soup mixture, and finish with the remaining 1 cup cheddar cheese on top.
  6. Cover tightly with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes, until potatoes are tender and cheese is golden and bubbly.

Tip

Slice the potatoes very thin (about 1/8 inch) so they cook evenly and become perfectly tender.
