Description

This Ground Beef Ramen Skillet is a quick one-pan dinner with savory beef, tender noodles, and crisp vegetables, ready in about 20 minutes.


Ingredients

1 lb ground beef

2 (3 oz) packages ramen noodles, seasoning packets discarded

2 cups low-sodium beef broth

1 cup shredded carrots

1 cup broccoli florets, chopped small

3 cloves garlic, minced

1/4 cup low-sodium soy sauce

2 tbsp brown sugar

1 tbsp sesame oil

1/2 tsp ground ginger

2 green onions, sliced


Instructions

1. In a large skillet over medium heat, cook 1 lb ground beef until browned and fully cooked. Drain excess grease if needed.

2. Add 3 cloves garlic and cook for 30 seconds until fragrant.

3. Stir in 2 cups beef broth, 1/4 cup soy sauce, 2 tbsp brown sugar, 1 tbsp sesame oil, and 1/2 tsp ground ginger.

4. Break the ramen noodles in half and add them to the skillet along with 1 cup shredded carrots and 1 cup chopped broccoli.

5. Bring to a gentle simmer. Cover and cook for 5-7 minutes, stirring occasionally, until noodles are tender and most of the liquid is absorbed.

6. Remove from heat and sprinkle with sliced green onions before serving.

Notes

Add 1/2 tsp red pepper flakes or a drizzle of sriracha for extra heat if desired.
