Description

A cozy ground beef shepherd’s pie with savory vegetables and a fluffy mashed potato topping baked until golden.


Ingredients

1 lb ground beef

1 tbsp olive oil

1 small yellow onion, diced

2 cloves garlic, minced

1 cup frozen peas and carrots

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 cup beef broth

1/2 tsp salt

1/2 tsp black pepper

2 cups mashed potatoes, prepared

1/2 cup shredded cheddar cheese


Instructions

1. Preheat oven to 400°F and lightly grease an 8×8-inch baking dish.

2. Heat olive oil in a skillet over medium heat and cook ground beef until browned. Drain excess fat.

3. Add onion and garlic, cooking for 2-3 minutes until softened.

4. Stir in peas and carrots, tomato paste, Worcestershire sauce, beef broth, salt, and pepper. Simmer 5 minutes until slightly thickened.

5. Spread beef mixture evenly into the baking dish.

6. Spoon mashed potatoes over the top and spread gently. Sprinkle with cheddar cheese.

7. Bake uncovered for 25 minutes until bubbly and lightly golden.

Notes

Leftover mashed potatoes work perfectly for this recipe and save prep time.
