Description

Soft, warmly spiced Healthy Gingerbread Oat Bars perfect for Christmas mornings or simple holiday snacking.


Ingredients

2 cups old-fashioned rolled oats

1 cup oat flour

1/2 cup unsweetened applesauce

1/3 cup pure maple syrup

1/4 cup melted coconut oil

2 large eggs

1/3 cup molasses

1 tsp vanilla extract

1 tsp ground ginger

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground cloves

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt


Instructions

1. Preheat oven to 350°F and line an 8×8-inch pan with parchment.

2. In a large bowl, whisk the applesauce, maple syrup, coconut oil, eggs, molasses, and vanilla until smooth.

3. Add the oats, oat flour, ginger, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt. Stir until fully combined.

4. Spread the batter evenly into the prepared pan.

5. Bake 22-25 minutes, or until the center is set and the top is lightly golden.

6. Cool completely before slicing into bars.

Notes

For firmer bars, bake toward 25 minutes and chill before slicing.
