Description
Crab Brulee is a luxurious seafood appetizer combining creamy custard and delicate crab meat, finished with a crisp caramelized sugar topping. Perfect for special occasions.
Ingredients
8 oz fresh lump crab meat, drained
4 egg yolks
1 cup heavy cream
1/2 cup grated Gruyère cheese
Salt to taste
Black pepper to taste
Pinch of cayenne pepper
2 tbsp granulated sugar
Fresh herbs for garnish
Instructions
1. Preheat oven to 325°F (160°C).
2. Whisk together egg yolks and heavy cream until smooth.
3. Season the mixture with salt, pepper, and cayenne.
4. Divide crab meat evenly into 4 ramekins.
5. Pour the egg mixture over the crab, leaving a small gap at the top.
6. Sprinkle grated cheese evenly on top.
7. Place ramekins in a baking tray filled halfway with hot water.
8. Bake for 30-35 minutes until custard is set but slightly jiggly in the center.
9. Cool the ramekins slightly, then sprinkle sugar evenly on top.
10. Caramelize the sugar with a blow torch until golden and crisp.
11. Garnish with fresh herbs and serve.
Notes
You can prepare the custard base a day ahead and caramelize just before serving for the best texture.
Use fresh lump crab meat for optimal flavor and texture.
