Description
A soft and chewy coconut dessert with sweetened condensed milk, inspired by a playful toy and finished with a Southern twist.
Ingredients
1 cup sweetened condensed milk
2 eggs
1/2 cup coconut milk
1 1/2 cups grated coconut (sweetened or unsweetened)
3/4 cup all-purpose flour (or cassava flour)
1/4 cup browned butter
1 tsp vanilla extract
Pinch of sea salt
Instructions
1. Preheat oven to 350°F (175°C) and line a square baking pan.
2. In a bowl, whisk eggs, condensed milk, and coconut milk until smooth.
3. Add vanilla and salt. Mix in flour and grated coconut.
4. Pour in browned butter and stir gently to combine.
5. Pour batter into prepared pan and smooth the top.
6. Bake for 30–35 minutes until golden and set in the center.
7. Cool completely before cutting into squares.
8. Serve warm or chilled, with coconut cream if desired.
Notes
Store at room temp for 2 days or refrigerate for up to 5.
Freezes well for up to 2 months.
