Ingredients
1 tbsp olive oil
1 lb boneless skinless chicken breast, diced
1 small yellow onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
6 cups low-sodium chicken broth
3/4 cup uncooked orzo pasta
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
Zest of 1 lemon
2 tbsp fresh lemon juice
2 tbsp chopped fresh parsley
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook 4-5 minutes until lightly golden.
2. Add onion, carrots, and celery. Cook 4-5 minutes until softened.
3. Stir in garlic and cook 30 seconds until fragrant.
4. Pour in chicken broth and bring to a gentle boil.
5. Add orzo, oregano, thyme, salt, and pepper. Reduce heat and simmer 8-10 minutes until orzo is tender.
6. Stir in lemon zest, lemon juice, and parsley. Taste and adjust seasoning if needed.
