Description
A bright, cozy Lemon Chicken Tortellini Soup made with tender chicken, cheese tortellini, lemon, and spinach.
Ingredients
1 tbsp olive oil
1 small onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 garlic cloves, minced
6 cups chicken broth
2 cups cooked shredded chicken
1 (9-oz) package cheese tortellini
1 lemon, zested and juiced
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 cup fresh spinach
Fresh parsley, for garnish
Instructions
1. Warm the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook 5-6 minutes until softened.
2. Stir in the garlic and cook 1 minute until fragrant.
3. Pour in the chicken broth, then add the shredded chicken, thyme, oregano, salt, and pepper. Bring to a gentle simmer.
4. Add the cheese tortellini and cook 5-7 minutes until tender.
5. Stir in the lemon zest, lemon juice, and spinach. Let the spinach wilt for 1-2 minutes.
6. Taste and adjust seasoning, then ladle into bowls and garnish with parsley.
Notes
Add a cornstarch slurry for a slightly creamier finish if desired.
