Description
Light and flaky Lemon Herb Baked Cod made with fresh lemon, garlic, and dried herbs. A simple oven-baked seafood dinner ready in under 30 minutes.
Ingredients
4 cod fillets (about 6 oz each)
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
Lemon slices, for topping
Instructions
1. Preheat oven to 400°F. Lightly grease a 9×13-inch baking dish.
2. Pat the cod fillets dry and arrange them in the prepared dish.
3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, parsley, salt, and pepper.
4. Spoon the lemon herb mixture evenly over each fillet. Top with lemon slices.
5. Bake for 12-15 minutes, or until the fish flakes easily with a fork.
6. Serve warm with extra lemon if desired.
Notes
For extra flavor, sprinkle a little paprika on top before baking or finish with a small pat of butter while the fish is still hot.
