Loaded Baked Potato Skins

Description

Crispy oven-baked potato skins topped with melted cheese, turkey bacon, sour cream, and green onions.


Ingredients

Scale

4 medium russet potatoes

2 tbsp olive oil

1/2 tsp salt

1/2 tsp black pepper

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

4 slices turkey bacon, cooked and crumbled

1/3 cup sour cream

2 tbsp chopped green onions


Instructions

1. Preheat oven to 400°F. Scrub potatoes, pat dry, and pierce each a few times with a fork.

2. Bake potatoes directly on the oven rack for 45-50 minutes, until tender. Let cool slightly.

3. Slice potatoes in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch inside the skins.

4. Brush both sides of the potato skins with olive oil and sprinkle with salt and black pepper.

5. Place skins cut-side down on a baking sheet and bake for 10 minutes, then flip and bake 10 more minutes until crisp.

6. Sprinkle cheddar and mozzarella evenly into the skins, top with turkey bacon, and return to oven for 5-7 minutes until melted.

7. Serve warm with sour cream and green onions on top.

Notes

Broil for 1–2 minutes at the end for extra crisp edges.
