Maple-Roasted Carrots with Fresh Thyme

Description

Cozy fall carrots roasted with maple syrup and fresh thyme until tender and lightly caramelized.


Ingredients

2 lbs carrots, peeled and cut into even sticks

2 tbsp olive oil

3 tbsp pure maple syrup

1 tsp kosher salt

1/2 tsp black pepper

1 tbsp fresh thyme leaves, plus extra for serving


Instructions

1. Preheat the oven to 425°F and line a large sheet pan with parchment.

2. Toss the carrots with olive oil, maple syrup, salt, pepper, and fresh thyme until evenly coated.

3. Spread the carrots in a single layer on the sheet pan without crowding.

4. Roast for 22-28 minutes, stirring once halfway, until tender and lightly caramelized.

5. Finish with a sprinkle of extra thyme before serving.

Notes

Slice thicker carrots lengthwise so they roast evenly.
