Ingredients

4 boneless, skinless chicken breasts

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

3/4 cup pitted Kalamata olives, sliced

1 tsp dried oregano

1/2 tsp dried thyme

1/2 tsp paprika

3/4 tsp salt

1/4 tsp black pepper

1/4 cup chicken broth

2 tbsp chopped fresh parsley


Instructions

1. Preheat oven to 375°F. Pat chicken breasts dry and season both sides with salt, black pepper, paprika, oregano, and thyme.

2. Heat olive oil in a large oven-safe skillet over medium heat. Sear chicken for 3-4 minutes per side until lightly golden.

3. Add garlic, cherry tomatoes, and olives to the skillet. Cook for 1 minute, stirring gently.

4. Pour in chicken broth and bring to a gentle simmer.

5. Transfer skillet to the oven and bake for 18-22 minutes, until chicken reaches 165°F.

6. Spoon sauce over the chicken and sprinkle with fresh parsley before serving.
