Description
Golden roasted baby potato rounds topped with sour cream, caviar, and fresh chives for an elegant bite.
Ingredients
1 lb baby gold potatoes, sliced into 1/2-inch rounds
2 tbsp olive oil
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 cup sour cream
2 tbsp finely chopped chives
2–3 tbsp caviar
Optional: lemon zest for finishing
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment.
2. Toss the potato rounds with olive oil, salt, and pepper, then spread them out in an even layer.
3. Roast for 20-22 minutes, flipping halfway, until golden and crisp on the edges.
4. Let the potatoes cool slightly, then add a small dollop of sour cream to each.
5. Top with a small spoonful of caviar and a sprinkle of chives.
6. Finish with a touch of lemon zest if you like, and serve immediately.
