Description
Baked mini corn dog bites served with a simple honey mustard dipping sauce.
Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 cup milk
1 large egg
2 tbsp melted butter
8 beef or turkey hot dogs, cut into bite-size pieces
Cooking spray
1/4 cup yellow mustard
2 tbsp honey
Instructions
1. Preheat oven to 375°F and lightly coat a mini muffin pan with cooking spray.
2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
3. Stir in milk, egg, and melted butter until smooth and thick.
4. Spoon batter into each muffin cup, filling about halfway, then press one hot dog piece into the center.
5. Bake for 14-16 minutes until golden and set.
6. Stir mustard and honey together and serve alongside warm corn dog bites.
Notes
Best served warm. Brush with melted butter after baking for extra flavor.
